350gm. dried pasta
• 250 gm. chicken breast-cubed
• 3 tbsp. olive oil
• 1 large onion- chopped
• 3 mixed peppers-chopped
• 200 gm. mixed vegetables
• 4-5 fresh green chillies
• 2 cloves garlic-finely chopped
• 400gm. chopped tomatoes
• 1 tsp. Italian mixed herbs
• salt and black pepper powder
• 200 gm. cheese-grated
Method:
1) Cook pasta in boiling water, when cooked cool under cold running water and place in an oven proof dish.
2) Fry onion with garlic in oil until golden brown. Add chicken pieces mixed pepper, chillies, mixed vegetables and herbs.
3) Add tomatoes, stir and cook for a few minutes to infuse the flavours.
4) Pour the chicken mixture over the pasta, mix well. Cook in the oven Gas mark4/180°C for 10 minutes.
5) Top with cheese before grilling for a bubbly top.
6) Serve with salad.
