Cucumber and Carrot Pickle

Ingredients: 
1 whole cucumber-cut into 4 cm. strips
2 carrots –cut into 4 cm. strips
5 cm. ginger-julienne
2 fresh green chillies
6-8 pickled onions and 4 tbsp. vinegar
100 gm. tomato ketchup
¼ tsp. turmeric powder
¼ onion-sliced
15 gm. butter
Method:
1) Wash cucumber and cut into strips.
2) Peel, wash carrot and cut into strips.
3) Scrape ginger and julienne.
4) Fry onion in butter until soft, add vinegar, pickled onion, turmeric, tomato ketchup and chillies.
5) Cook until the mixture is dried, off the gas. Cool
6) Add cucumber, carrot and ginger strips.
7) Serve with rice or a noodle dish.
